Confessions of a Foodie: Sunday Comfort Breakfast


A lazy rainy Sunday means comfort food!! I absolutely love crêpes! I fell in love with them when I got the recipe way back in elementary school when we celebrated Carnaval d’hiver (Winter Carnival).  I would make them with my mom on the weekends and when I got older,  I would just make them myself I loved them so much! Now the girls help me make them on the weekends. We mainly enjoy them for breakfast but we also indulge with some ice cream for dessert. The girls love them so much that they ask for them daily but I don’t think my body could handle that!

I looooove having my breakfast crêpes with bacon, but that clearly isn’t the best to have health wise so I opt for a new and healthier fave which is homemade turkey sausage! I’ve included the recipe below for you to try at home as well. Serve with your crêpes and some fresh fruit and enjoy!

Vanilla Crêpes

Ingredients:

1 1/2 cups milk

3 eggs

2 tablespoons vanilla extract

1 1/2 cups  flour

2 tablespoons raw sugar

1/2 teaspoon salt

5 tablespoons melted butter

Directions

Mix ingredients together in a large bowl until well blended.

Heat a  pan over medium heat until hot and coat with desired oil or cooking spray.

Pour about 1/2 cup of batter into the pan and tip to spread the batter to the edges.

When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden.

Repeat with remaining batter.

Turkey Sausage

Ingredients:

1 pounds ground turkey

1 teaspoon ground ginger

1 teaspoons salt

1 teaspoon dried sage

1 teaspoons ground black pepper

1/4 teaspoon cayenne pepper (optional)

Directions

In a large bowl, mix together all ingredients until well blended.

Heat a skillet over medium-high heat, and coat with nonstick cooking spray.

Form the turkey sausage into small patties, and fry until browned on both sides, and no longer pink in the center (roughly 15 minutes).
